ET Bars

Anyone who was ever in Mrs. McCaslin's class surely had some of these ET bars! This is a tribute to my favorite teacher of all time. Although of course when I made them, they didn't taste like hers! She says it is because she uses her hands. So make some ET bars and be transported back to 6th grade!
ET Bars
1 lb. powdered sugar
3/4 c. brown sugar
16 oz. peanut butter
1 stick margarine, softened

Blend together and press into cookie pan. (I am not sure what size a "cookie pan"is. I used a 9x13, but you could probably use something bigger. Mine were pretty thick.)

Melt together 12 oz. chocolate chips with 3 T. butter. Spread over peanut butter mixture. Chill. Cut.

Chocolate Chip Muffins

I thought I'd try making these muffins so the kids would have something different for breakfast and/or snacks. The recipe is HERE. I read the reviews and used 1 c. of plain yogurt in place of the milk, and used only 1/4 c. oil. Check them after about 18 minutes or so... I thought they were really good, but the kids each only took a couple bites.

Cornell Chicken Marinade

This is the only chicken marinade you'll ever need! You can find the recipe and read reviews HERE. I've been making this for about ten years with no complaints. Please don't add as much salt as the recipe calls for though! You really only need about a teaspoon.

Crockpot Broccoli Casserole

We had some friends over for dinner and I wanted to do something different. I found this broccoli recipe that you make in your slow cooker. Perfect! Granted, it doesn't look the most appetizing, but it tastes great, even though I cooked it way too long. You can find the recipe here at my favorite CrockPotting blog. I used Havarti cheese because that's what I had, but next time I'll try one of the ones she mentioned. Enjoy! Be forewarned... your house will smell like broccoli. Not just a little bit.

Weeknight Lasagna Toss

I've avoided making lasagna for years. Literally. I find it too tedious. Then I found THIS recipe in my Kraft Food and Family magazine. Now I can't stop making it (minus the green peppers!). The package of lasagna noodles I bought had sixteen noodles in it, sooooooo I planned ahead and used only eight for the recipe. It worked fine and still made a huge amount. One of the extra tips at the bottom mentioned using ricotta, so I did that too. Definitely a hit with most of us... (there is always that one, isn't there?)

Cherry Cheese Danish

This is a quick and easy recipe that is amazing! You can find the recipe link HERE. This is another recipe from the Kraft Food and Family magazine that doesn't disappoint.

To get the lines to be relatively even, make the icing and place it in a small sandwich bag. Snip the corner and drizzle it on. You can use a fork as the recipe states, but I just haven't had much luck with that method. Enjoy!
